Berkshire Hogs are a Heritage breed not produced in large factory farms due to their slow growth and poor performance in corporate hog operations. The pig’s meat is darker than commercial pork and far more flavorful than the pork found in your grocery store freezer.

Farm Fresh at Fox River animals are raised the old-fashioned way – outside- grazing through thick, fresh Wisconsin grasses and wandering acres of woods rooting and foraging to their hearts content. They are happy, curious animals and absolutely delicious!

Berkshire Pork is sold primarily oversees to Japanese consumers who prize their darker meat with beautiful marbling which makes it tender and juicy.  Berkshires are a higher quality meat and we sell directly to consumers (and chefs) who are interested in taste, humane treatment of animals, and better stewardship of the environment.

Our hogs are sold based upon the “dressed weight.”  Dressed weight is the weight of the carcass after the animal has been eviscerated. 

At Farm Fresh at Fox River, we process our hogs between 7-9 months.  At that age, they typically weigh 250-300 lbs. live with an average dressed weight of 180-200 lbs.  A whole hog will yield approximately 120-130 lbs. of meat and a half hog between 65-75 lbs. of meat.  We charge $4.75 per pound for a whole or half hog.   Also, we require a $150 non-refundable deposit per hog which is applied to the total cost of the hog.

We use Lake Geneva Country Meats and the Processing fees include harvesting, cutting fresh cuts, and paper wrapping them, packaging trim, boxing, and freezing. 

  • Processing Whole Pig (dressed weight)             $1.05 per lb.
  • Processing Half Pig (dressed weight)                 $1.10 per lb.

By using Lake Geneva Country Meats you, the customer, are able to select the type of cuts that best suit your family’s needs.

As an example, a 180 lb., dressed weight, whole hog would cost $855 + processing fee $189 = $1,044. The Final Price is determined after slaughter once the processor determines the dressed weight.
