Everyone knows about the Black Angus’s cousin, the Dairy cow but let us tell you a little bit about our favorite Black Angus cattle.

Black Angus cows, also known as Angus cattle, are a breed of cattle that originated in Scotland. They are named after the county of Angus (or Forfarshire) in northeastern Scotland, where they were first bred in the early 19th century. The breed gained popularity due to its ability to thrive in the harsh Scottish climate and its high-quality beef. Black Angus cattle are typically solid black in color, although occasionally you may find some individuals with white markings on their face or underbelly. They have medium-sized frames and are known for their muscular build. One of the primary reasons for the popularity of Black Angus cattle is the quality of their meat. Angus beef is highly regarded for its marbling, tenderness, and flavor. It is often favored by consumers and chefs alike. Black Angus cows usually reach maturity at around two years of age. Bulls typically weigh between 1,800 to 2,200 pounds (820 to 1,000 kg), while cows weigh between 1,100 to 1,500 pounds (500 to 680 kg).

Our cattle are raised through rotational grazing, where livestock are moved to portions of the pasture, called paddocks, while the other portions rest.  Typically, our beef herd graze a paddock with a mixture of alfalfa, grasses, and red clover for 1-3 days before we move them to the next paddock.  Rotational grazing improves pastures in the long-term resulting in an abundance of desirable species and eliminating the wasting of forage.  Rotational grazing is better for the animal and better for the environment.  

At Farm Fresh at Fox River, we process our beef between 18-24 months.  At that age, they typically weigh 1,200-1,400lbs live weight.  As an example, a 1,200lb. live weight steer will yield a 696-768lb. dressed weight. 

We charge $5.50 per pound dressed weight and require a $150 non-refundable deposit per order which is applied to the total cost of the beef.   2024 processing is scheduled for October 1st at Lake Geneva Country Meats in Lake Geneva, Wisconsin.    

For processing and packaging, we use Lake Geneva Country Meats.  Basic beef processing includes harvesting, cutting fresh cuts, and paper wrapping them, grinding trim and packaging in shirrs, boxing, and freezing.  Processing fees include harvesting, cutting wrapping, boxing, and freezing. 

  • Processing Whole or Half (dressed weight)             $1.15 per lb.
  • Processing Half of Half (dressed weight)                  $1.20 per lb.
  • Processing When All Boned (dressed weight)         $1.40 per lb. 

Other extra charges apply for special packaging requests such as having certain items wrapped one to a package, vacuum sealing, custom labels, etc. 

By using Lake Geneva Country Meats you, the customer, are able to select the type of cuts that best suit your family’s needs.

As an example, a 750 lb. (dressed weight) whole angus would cost $4,125.00 + processing fee $862.50 = $4,987.50. The Final Price is determined after slaughter once the processor determines the dressed weight. 

For angus beef, we can arrange for a whole or half order of beef.  For a ¼ order, we recommend you team up with a friend or family member to and order a half beef.
